October 2025 Cooking Classes with The Chef’s Table CdA

The Chef’s Table CdA is excited to announce their October 2025 class schedule! Be sure to register today to attend one (or more!) of these entertaining, and delicious, culinary events. All classes begin promptly at 6pm, with doors opening 15 minutes prior, at the GreenTent Station Event Center (2775 North Howard Street) in Coeur d’Alene, Idaho. An Evening in India with Chef Lesa
A night in India, join Chef Lesa for a culinary adventure! Big bold spices, techniques and flavor! To begin your evening, we will create Cucumber Raita Salad, cukes on a bed of Greek yogurt with a sizzling spice drizzle. The main course will be Butter Chicken! Mouthwatering, delicately spiced chicken in a warm curry. This dish will be served with Mujadara, a spiced lentil and rice dish. Handmade buttery Naan will be served with dinner!

An Evening in Vietnam with Chef Lesa
Vietnamese class is back! Join Chef Lesa for this high-demand class featuring a night full of big flavor and her famous Pho! To begin your evening, you will enjoy a traditional Sizzling Crepe! This is created with egg and filled with prawn, veggies and a bright sauce. For the main course … Pho Bo! A beef soup simmered for hours and served over rice noodles and topped with fresh herbs! For dessert, Chef Lesa will make her Banana Bread Pudding! Don’t wait on this one!

A Night in Havana with Chef Lesa
Treat yourself to a lovely Havana night with Chef Lesa. To begin your adventure, you will enjoy Ajiaco Soup, a rich broth with corn riblets, squash and sweet potato. For your main course, Chef Lesa will teach you how to make an authentic Mojo sauce that will smother a beautiful pork tenderloin … Mojo Pork! For dessert, she will be making the divine and traditional Guava Bars, sweet and tart with a dash of butter.

Southwest Chicken Two Ways with Chef Ricky
Get ready to fire up your tastebuds in a bold, flavor packed class that celebrates the smoky, spicy soul of southwest cuisine. Chef Ricky will teach you how to dominate on the grill to create a Spatchcock chicken, crispy skin and juicy meat! The meat will be shredded to create rich, creamy green Chile enchiladas bubbling with melty goodness! the next dish will utilize the chicken into sliders with all the good toppings! for sides, Chef Ricky will make a pot of his Charro beans laden with bacon and brown sugar. There will also be a tangy slaw. Join us for this culinary journey where smoke meets spice, come hungry…. leave inspired!

Chinese Takeout with Chef Lesa 
Enjoy some of your favorite Chinese takeout dishes with Chef Lesa! You will begin your evening enjoying a bowl of piping hot Egg Drop Soup. The next dish will be Cashew Chicken, loaded with juicy chicken and veggies all stir fried in a divine sauce and crunchy cashews. The final dish is a traditional Egg Foo Young, soft and savory topped with a traditional gravy.

A Night in Korea with Chef Lesa
Join Chef Lesa for one of her favs! This cuisine has mild heat, and a little sweet! Homemade Kimchee will be a technique taught and enjoyed in class. The first dish will be a Gochujang Chicken Boa, a fluffy steamed bun with a spiced glazed chicken, topped with pickled veggies. Your main course will be Bibimbap bowls filled with steamed rice, bulgogi beef, stir-fried Asian vegetables and topped with a gooey fried egg!
