Vietnamese Night with Chef Lesa
Join Chef Lesa LeBeau on Tuesday, June 3, for a wonderful evening filled with bright flavors, spices and seasonings. To open the evening, Chef Lesa will begin the class with a Crispy Rice Paper Dumpling with sauce. For the main course will be her famous Pho Ga, Chicken-Based Soup with fresh herbs and bean sprouts. For dessert, Chef Lesa will be making her delicious Banana Cake with a Caramel Sauce. We can’t wait to see you at the first class at our new venue!

Springtime Bounty with Chef Kim
Join Chef Kim Lehr Thursday, June 5, as she celebrates spring using seasonal ingredients! To begin the night, Chef Kim will make an Asparagus and Artichoke Salad with arugula, grana padano and bistro vinaigrette. The main course will consist of Garden Pea Orzo with guanciale, burrata, pea shoots and lemon. And to end the night, Strawberry Rhubarb Crumble with brown sugar crumble, citrus whip and fresh mint.

Join Chef Kim Lehr on Tuesday, June 10, for her Summer Celebration class featuring … tomatoes! To start the night, Chef Kim will prepare an Heirloom Tomato Salad with burrata, sourdough crostini, and basil oil. For the main course, enjoy a Smoky Blue Tomato Tart with Lemony Arugula Salad, Lardon, and Pickled Red Onion. To close out the evening, something sweet! Lavender and Almond Shortbread with Lemon Curd.

Cooking Wild with Chef Troy: Inland Miners’ Classics
For this cooking demo, Chef Troy wants to celebrate our local mining heritage. To start we will enjoy a Wild Greens and Root Salad. We will learn how to create a Huckleberry Honey Vinaigrette Emulsification. Chef Troy will then show us how to make the perfect “Pastie” using Venison and Root Vegetables. These O.G. “Hot Pockets” were a staple for mine workers as they were easily carried to work and were jammed packed with much-needed calories and nutrients. We will create the perfect dough, filling and … yes, gravy for these amazing lost, but not forgotten, culinary pastries. To finish off a perfect night, Crème Brûlée, but not just any Crème Brûlée. Chef will serve us his favorite fired-up whiskey pudding with a glass top.

Dim Sum with Chef Lesa
Dim Sum is back! Join Chef Lesa Tuesday, July 1, for a night full of spice and steam! The first course will be Xiao Long Bao, a pork-filled soup dumpling. Next, you’ll be treated to a Rice Paper Shrimp Dumpling with a spicy dipping sauce. Last, but not least … Shrimp Toast! Crispy and sweet! Seasoned rice will accompany these dishes.
