July 2025 Cooking Classes at The Chef’s Table CdA

The Chef’s Table CdA is excited to announce our July 2025 class schedule! Be sure to register today to attend one (or more!) of these entertaining, and delicious, culinary events. All classes begin promptly at 6pm, with doors opening 15 minutes prior, at the GreentTent Station Event Center in Coeur d’Alene, Idaho. Dim Sum with Chef Lesa
Dim Sum is back! Join Chef Lesa Tuesday, July 1, for a night full of spice and steam! The first course will be Xiao Long Bao, a pork-filled soup dumpling. Next, you’ll be treated to a Rice Paper Shrimp Dumpling with a spicy dipping sauce. Last, but not least … Shrimp Toast! Crispy and sweet! Seasoned rice will accompany these dishes.

Chinese Takeout with Chef Lesa
Join Chef Lesa on July 8 for a fun night creating classic Chinese cuisine! Your first dish will be General Tso’s Chicken –  a little heat, crispy and sauces! The next dish will be house Lo Mein – noodles loaded with prawns, chicken and pork. Your final dish will be Beijing Beef – loaded full of veggies with strips of tender beef in a rich sauce. Savory + Sweet Summertime Barbecue with Chef Troy
Join Chef Troy on Thursday, July 10, as he celebrates the summer season with this savory and sweet class highlighting barbecue! First up, a Hickory-Charred Romaine Salad with a raspberry-huckleberry-lemon vinaigrette with shaved Manchego cheese. Up next, a medley of sliders: Pulled Pork, Fried-Shrimp Po-Boy, and Wild Boar Burger with select toppings to perfectly complement the proteins. These will be paired with Elote – Mexican Street Corn … Grilled local corn on the cob smothered in garlic aioli and spices, sprinkled with Cotija cheese. To finish the night, Aged-Balsamic and Fresh-Mint Marinated Watermelon. Summer never tasted so good!

Burnt Ends with Chef Ricky
Chef Ricky is back with award-winning Texas BBQ! You will learn about smoking and grilling techniques and enjoy some amazing food! Burnt ends is this night’s theme! Salmon, pork and beef, glazed and smoked to perfection! To enjoy with your meal will be a medley of sautĂ©ed veggies and a cheesy hash brown casserole. For dessert you will enjoy smoked cookies with ice cream. Our mouths are watering!

Smoked Brisket with Chef Ricky
Join Chef Ricky for an evening enjoying authentic Texas BBQ! Ricky will be making a smoked brisket and sharing his secret barbecue sauce. To enjoy with your smoked brisket, he will make Southern mashed potatoes and a … fresh, crisp local garden salad. Dessert will be his famous local peach cobbler with ice cream. Don’t miss this!

Cooking French in Coeur d’Alene with Chef Troy
Join Chef Troy for an evening of fine French cuisine. Chef Troy will begin the night serving each guest a specially prepared Charcuterie Board adorned with a variety of cured meats, specialty cheeses and savory and sweet accompaniments and dips. For the main course, the French classic Coquille Saint-Jacques, a dish featuring scallops in a creamy sauce of white wine, shallots and mushrooms, accompanied by truffle parmesan risotto and asparagus … and baguette. To sweeten the night, CrĂŞpes filled with a cherry compote (made from this season’s freshly picked cherries from Chef Troy’s cherry tree!) and topped with whipped cream with a hint of lemon. Bon appĂ©tit!

Hands-On Pasta Making with Chef Lesa

This will be a class to learn the art of pasta, so roll up your sleeves! Chef Lesa will teach you how to make Orecchiette or “little ears” pasta by hand. We will pair this pasta with a beautiful sausage ragu. The next pasta will be a tri-colored sheet cut into pappardelle and served with a lemon pesto. There will be a robust Italian salad with northern beans, veggies and a light vinaigrette to start your adventure! This class sells out quickly and has limited seating.

Japanese Ramen Night with Chef Lesa
Enjoy a very umami flavor-filled night! Chef Lesa will prepare a Japanese salad with cucumber, daikon and carrot ribbons with a ponzu dressing. For the main course is Chef’s “marry me” roasted chicken ramen. This soup is rich, silky and decadent. Your bowl will be filled with noodles, roasted chicken, bok choy and a shoyu soft egg. For dessert will be a matcha tiramisu!
