As the holidays are quickly approaching, The Chef’s Table is filling up quickly with private events for the months of November and December. This month, they will be offering four cooking classes open to the public. All classes begin promptly at 6pm, with doors opening 15 minutes prior, at the GreenTent Station Event Center (2775 North Howard Street) in Coeur d’Alene, Idaho. A Night in New Mexico
Join Chef Lesa and enjoy lovely warm, comforting cuisine from New Mexico! To begin this adventure, you will enjoy a hot bowl of Posole Rojo. This is a soup with red chiles, chicken and all the lovely toppings. There will also be a Hatch/Pepita Salsa. For the main course will be a New Mexico Hatch Chile Stew. The protein will be tender pork with potatoes and spices. To end the night with a sweet treat, the chef will prepare Bizcochitos … a spiced cookie you will dip in a cup of melted chocolate.

Journey through Vietnam
Chef Lesa is back with her most requested class … Vietnamese Cuisine. The first dish will be a traditional Banh Mi sandwich – roasted pork, pickled veggies, all on a crusty roll. The main course will be Pho Ga’, a spiced chicken soup over rice noodles and garnished with fresh herbs. All steps will be taught in class. For dessert you will enjoy a traditional rice pudding made with coconut cream and topped with fresh mango.

French Comfort Food
Please join us for a lovely evening enjoying French cuisine. To open the evening, Chef Lesa will make an authentic French Onion Soup topped with a crust of bread and melted Gruyère cheese. The main course will be Chicken a La Normande. If you love chicken, apples, bacon and cream simmered in brandy, then you will be in heaven. A Fondant Potato will be served with this dish. Dessert will be a French Apple Cake with Chantilly Cream.

Ethiopian Flavors
This class is one Chef Lesa loves to share, as this cuisine is not the most well-known. Chef will walk you through Berbere Spice … cinnamon, ginger, cardamom … warm spices to sooth the winter soul. You will learn about Injera bread. This is made with teff flour and has a lovely spongy feel. There will be several dishes on one plate to be picked up with Injera (fork optional): Doro Wat (a stewed chicken in spices), Mesir Wat (a lentil dish simmered in spices) and Abesha Comen (collard greens simmered in stock and fresh spices). There will also be a salsa called Tim Tim on the plate. This is a culinary adventure full of flavor!
