January 2026 Cooking Classes & Events with The Chef’s Table CdA

At The Chef’s Table CdA, we believe cooking is about more than recipes. It’s about slowing the pace, savoring the process and enjoying the conversations that naturally unfold around the table. January feels like the right time to return to those simple pleasures, and our classes offer a warm, welcoming space to do just that.

Whether you’re joining us with friends, planning a date night or treating yourself to something creative after the holidays, our January lineup offers a meaningful way to start the year.  All classes begin promptly at 6pm, with doors opening 15 minutes prior, at the GreenTent Station Event Center (2775 North Howard Street) in Coeur d’Alene, Idaho. Ethiopian Flavors
This class is one Chef Lesa loves to share, as Ethiopian cuisine is not the most well-known. Chef will walk you through Berbere Spice … cinnamon, ginger, cardamom … warm spices to sooth the winter soul. You will learn about Injera bread. This is made with teff flour and has a lovely spongy feel. There will be several dishes on one plate to be picked up with Injera (fork optional): Doro Wat (a stewed chicken in spices), Mesir Wat (a lentil dish simmered in spices) and Abesha Comen (collard greens simmered in stock and fresh spices). There will also be a salsa called Tim Tim on the plate. This is a culinary adventure full of flavor!

Cheese-Making
Cheese-making with chef Lesa! Enjoy a hands-on night creating magic from milk and cream. In this class, you will be making Mozzarella Cheese… and the beloved Burrata! Chef Lesa will also show you how to make Ricotta Cheese and Cream Cheese with many flavors added. There will be a few other make-at-home surprises as well. Learning these methods will really save you money!

Japanese Night
On a cold winter’s night, soup sounds lovely! You won’t want to miss Chef Lesa’s Japanese Night, where you’ll learn how to make War Wonton Soup from scratch. You will also enjoy Tsukune, a spiced chicken meatball with chili rice. Dessert will be the spongy Mochi Butter Bars.

An Evening in the Mediterranean
Join Chef Lesa for a night enjoying bright, healthy dishes. To begin the evening, you will enjoy a Lentil Salad with veggies and a lemon dressing. The main course is Baked Cod with olives, tomatoes and many treats, served with Saffron Rice. For dessert, you will enjoy a Greek Honey Cake topped with pistachios.
